cup NEPTUNE'S GROUND CONCH
2 tbl. Olive Oil
2 shallots, chopped
4 cloves garlic, chopped
1 pint tomatoes, peeled & diced
1/2 cup tomato puree
1 pint tomato juice
1/2 bunch parsley, chopped
1 bunch basil, chopped
1/4 cup fresh butter
1 lb. Cooked pasta
Saute shallots. Add garlic and saute. Add tomato and puree. Simmer for 1/2
and hour, and then add conch and simmer another 1/2 an hour. Add herbs and
butter. Serve over pasta. Serves 8.
